This volume is the seventh publication within the framework of the scientific series of the Dr. Rainer Wild Foundation. The Foundation was inaugurated in 1991 on the initiative of Prof. Rainer Wild and actively promotes a balanced and healthy nutrition within our industrial society. An important concern of the Foundation is to view the topic "Healthy Nutrition" in terms of a holistic approach. It is not only what we eat that is relevant to our health but also how, where, why, and with whom we eat. The current practice of communication in the nutritional economy often produces significant uncertainty in a large fraction of the population. Efficient and comprehensive publicity by entrepreneurs on the industrial production of foodstuffs needs a new concept for communication between producers, processors, wholesalers, retailers, and end users. Without overgeneralizing, the author explains what makes the consumers uncertain and which consequences this uncertainty has for their nutritional behavior. The main aim of this book is the empirical explanation of the connection between the uncertainty concerning the health value of industrially produced foodstuffs and the behavior of consumers in relation to information. Based on a representative consumer survey, the book shows how consumers currently perceive the publicity activities of the food industry and what their needs are as far as information is concerned. The practical consequences derived from the empirical results are comprehensibly described and the practice-oriented approaches for entrepreneurial publicity activities are discussed

Ziel des Beitrags ist es, die Anwendung des Prinzips Nachhaltigkeit in der Ernährungsindustrie aufzuzeigen und Rahmenbedingungen für die praktische Umsetzung zu erörtern. Drei exemplarische Bezugspunkte einer nachhaltigen Entwicklung werden dargestellt. Sie liegen in der Tatsache, dass Nachhaltigkeit erstens den gesellschaftlichen Anspruchsgruppen als Grundprinzip von Lebensmittelsicherheit geeignet erscheint, sich daraufhin zweitens neue Geschäftsfelder für die Ernährungsindustrie eröffnen und drittens die Information der Öffentlichkeit durch Berichte über Nachhaltigkeit zunehmende Bedeutung in der unternehmerischen Marketingstrategie erlangt. In der Praxis hat sich dieses Leitbild jedoch noch nicht so weit durchgesetzt, dass entscheidende Segmente der Produktion dadurch geprägt werden. "Nachhaltige Ernährung" ist als Begriff für den unternehmensinitiierten Verbraucherdialog ungeeignet, als Zielpunkt industrieller Lebensmittelproduktion zu wenig konkret und für die Produktionspraxis zu wenig operationalisiert. Hintergrund: Der Begriff "Wertschätzung für Lebensmittel" ist in der Fachliteratur nicht klar definiert. Mehr Wertschätzung wird zwar allerorts gefordert, es liegen aber kaum Studien dazu vor, was Verbraucher darunter verstehen. Offene Fragen sind: Wie wird der Begriff beschrieben? Wie gehen Verbraucher in ihrem Ernährungs- und Einkaufsalltag damit um? Resultiert aus hoher Wertschätzung auch Mehrzahlungsbereitschaft? Methoden: Es wurde ein gemischter Methodenansatz gewählt: Modul 1 bildet eine qualitative Verbraucherbefragung (56 Online-Tagebücher und sechs Fokusgruppen in Deutschland in Kooperation mit FORSA MARPLAN). Modul 2 ist eine Delphi-Studie mit acht Experten aus Wissenschaft, Politik und Wirtschaft. Ergebnisse: Der Begriff "Lebensmittelwertschätzung" ist aus Verbrauchersicht viel mehr als Abfallvermeidung. Zusammenfassend wird eine vorläufige Definition für den Begriff abgeleitet. Es gibt unterschiedliche Komponenten von Wertschätzung: Z. B. Geschmack / individuelle Werte / Achtung gegenüber Tieren, Pflanzen und Ressourcen / Respekt gegenüber Menschen, die Lebensmittel produzieren, verarbeiten und handeln. Diese Parameter sind eng mit einer Mehrzahlungsbereitschaft verknüpft. Schlussfolgerung: Die Studie zeigt insgesamt, dass Verbraucher Lebensmittel wertschätzen wollen. Sie stoßen in ihrem Alltag aber schnell an Grenzen: Ökonomisch bedingt, bildungs-, stress-, und zeitbedingt bzw. bedingt durch die zu geringe Transparenz des Entstehungsweges des Lebensmittels. Strategisch "Mehr Wertschätzung" zu erzeugen, muss deshalb als komplexe öffentliche Bildungsaufgabe gesehen werden, an der alle Stufen der Lieferkette mitwirken sollten.

Recently adopted regulatory standards on infant and follow-on formula for the European Union stipulate that from February 2020 onwards, all such products marketed in the European Union must contain 20–50 mg omega-3 DHA (22:6n–3) per 100 kcal, which is equivalent to about 0.5–1% of fatty acids (FAs) and thus higher than typically found in human milk and current infant formula products, without the need to also include ω-6 arachidonic acid (AA; 20:4n–6). This novel concept of infant formula composition has given rise to concern and controversy because there is no accountable evidence on its suitability and safety in healthy infants. Therefore, international experts in the field of infant nutrition were invited to review the state of scientific research on DHA and AA, and to discuss the questions arising from the new European regulatory standards. Based on the available information, we recommend that infant and follow-on formula should provide both DHA and AA. The DHA should equal at least the mean content in human milk globally (0.3% of FAs) but preferably reach 0.5% of FAs. Although optimal AA intake amounts remain to be defined, we strongly recommend that AA should be provided along with DHA. At amounts of DHA in infant formula up to ∼0.64%, AA contents should at least equal the DHA contents. Further well-designed clinical studies should evaluate the optimal intakes of DHA and AA in infants at different ages based on relevant outcomes.
