AbstractThis article brings together two Geographical Information Systems (GIS) datasets – building-level land-use data from the 1852–54 Perris Fire Insurance Atlas, and geocoded home addresses from the 1854 city directory – to explore how desirable and undesirable conditions of the built environment accounted for new dynamics of residential separation in mid-nineteenth-century New York. Using spatial analysis, it shows how early forms of residential separation were driven by the desire of elites to create secluded residential neighbourhoods. Further, although stark contrasts delineated the extremes of wealth and poverty, the city's dominant landscape was defined by in-between conditions and subtle variations in built environment and residential distance.

ABSTRACTThis article contributes to discussions about the spatial organization of urban food retail on empirical and theoretical grounds. As a case-study, it presents new analysis of New York City's public market system between 1790 and 1860, documenting its expansion and geography relative to urban growth, and how the deregulation of the meat trade by the 1840s reshaped this vital infrastructure. More broadly, it theorizes the municipal market system's geographic principles, emphasizing its countervailing dynamics of agglomeration and dispersal. Exploiting the city's transition from a public to a free market model, it further demonstrates how distinct political economies produced profoundly different geographies of retail food distribution.

The articles gathered in this special section explore the complex and layered relationship between meat and the nineteenth-century city. For urban historians interested in food provisioning, meat represents a critical juncture because no other food item was so deeply and, in so many ways, tied to urban modernity. This introduction outlines five central themes of the urban meat nexus: city and country relations, geography and urban space, technology and infrastructure, government and regulation, and changing nutritional standards. The four articles speak to these larger issues in specific and novel ways. They advance the existing scholarship by opening up new questions and approaches, focusing on hitherto understudied locations, while also collectively covering the entire spectrum of meat provisioning from supply hinterlands to urban consumption.
